Alipús built its name on a simple idea: let each village's agave and craftsmanship speak for itself, and this XX Aniversario bottling honors two decades of that work in Potrero, Sola de Vega. Maestro mezcalero Don Felix García distilled it from wild tobalá agave, roasted in earthen pits, hand-mashed in hollowed canoas, and fermented with native yeasts before a slow pass through a clay pot still. Expect dried rose petals and honey on the nose, giving way to raisin and date on the palate. Pour it neat, slowly, for sipping.
