Alipús works like a village map of Oaxaca: each release comes from a different family distilling in their own hills, meant to show how terroir changes the pour. Santa Ana del Río's espadín grows above 4,000 feet in pale, rocky soil, then gets pit-roasted, crushed by a horse-drawn tahona, and left to ferment wildly in tall pine vats before double-distilling in copper. Expect pineapple, tamarind, and menthol against a mineral, faintly smoky backbone. Sip it neat, slow, and unhurried — mezcal rewards patience.
