Ensamble means blend, and Aldez takes that literally: three Oaxacan agaves — espadín, rare jabalí, and wild tobalá — cooked and distilled together in the village of San Juan del Río. The result opens with campfire smoke and cooked agave on the nose, settles into earthy, smoky agave on the palate, and finishes long and faintly sweet. Bottled unaged at 45% ABV, it's built for slow sipping neat or over a single large ice cube, letting each agave's personality show through the blend.
