Aguamiel Bacanora Blanco is an unaged bacanora — a wild-agave spirit distinct from tequila and mezcal — produced in Sonora, Mexico under the region's protected designation of origin. The brand distills it from wild highland agave (locally called agave pacifica or yaquiana) that's roasted in open pits and fermented before small-batch copper-pot distillation. Expect an earthy, mesquite-smoked nose with soft anise, giving way to grassy agave, licorice, and caramel on the palate, finishing warm and mineral. Pour it neat to explore the smoke, or shake it into a Bacanora Paloma.
