Tobasiche is one of the trickier agaves to coax into balance, which makes this bottling from maestra Berta Vazquez such a find. Working in San Baltazar Chichicapam, Oaxaca, she roasts the karwinskii agave in underground pits, crushes it by tahona, ferments in sabino-wood vats, and double-distills in copper. The result is thick and inky, layering roasted agave and mesquite smoke with grassy, herbal notes. Pour it into a copita and sip slowly, neat. It rewards unhurried evenings and curious palates.
