English single malt from Adnams' Copper House Distillery in Southwold, Suffolk, and it's a lovely doorway into East Anglian whisky. Built entirely from locally grown malted barley, small-batch distilled in copper pot stills, then matured at least five years in new French oak with some spirit resting in bourbon barrels. Expect runny honey, vanilla and apricot up front, then blueberry, chocolate and a peppery spice that carries into a warm caramel finish. Sip it neat or over a single big cube.
