Saint Lucia Distillers built this one around an unusual detail: rum drawn from the lowest plate of their 45-tray Coffey column, aged 13 years in ex-bourbon casks before a nine-month finish in Port barrels. It pours a deep mahogany and opens with dried prunes, toasted oak, and warm vanilla, settling into dark chocolate, licorice, and candied fruit, with tobacco lingering at the finish. Only 4,200 bottles were made. Pour it neat after dinner, when there's time to let the Port influence unfold.
