Acumen's Mountain Side Cabernet comes from steep, rocky vineyards on Napa's Atlas Peak, planted back in 1992, high enough that the fruit ripens slowly and holds onto real structure. Winemaker Phil Titus blends in a touch of Merlot and Malbec, then ages it in fifty percent new French oak, landing on notes of dark berries, violet, espresso, and pencil shavings with supple tannins and a long finish. Pour it with a grilled ribeye, or let it breathe for an hour first.
