Pontarlier, France once earned the nickname "Capital of Absinthe," and this bottle comes from one of the last two distilleries still operating there, working from the house's original pre-ban logbook recipes on antique copper alembic stills. A chardonnay grape spirit from Burgundy carries locally grown wormwood, green anise, and fennel into a pale peridot spirit that turns billowy and opalescent the moment cold water is dripped in. Expect a briny, minty aroma and a layered anise-forward palate. Louche it slowly over a sugar cube, the classic way.
