1693 Distillery Bourbon Whiskey is a small-batch straight bourbon from Fredericksburg, Texas, named for the 1,693-foot elevation of the distillery's Hill Country property. The mash bill runs 99% Texas corn to 1% malted barley, aged four-plus years and cut with well water drawn on-site in Gillespie County. Expect sarsaparilla, butterscotch, and cracked pecan on the nose, giving way to warm apple pie, cocoa, and white pepper on the palate, with a light, clean finish. Pour it neat or over one large cube to let those spice notes stretch out.
