1509 marks the year Moctezuma reportedly watched a comet cross the sky and read it as a bad omen — hence the brand name, "El Principio del Fin," the beginning of the end. This Tobalá expression uses agave that's notoriously slow to mature and hard to farm, sustainably cultivated by the Alva family rather than wild-harvested. Cooked in earthen pits and distilled in small batches, it opens with lemon, green pepper, and pear, settling into citrus, basil, and roasted fig on the palate. Best sipped neat, slowly.
