Cuishe agave (Agave karwinskii) grows tall and cigar-shaped instead of the usual rosette, taking 12 to 15 years to mature — one of the slowest, rarest magueyes in Oaxaca. 1509's "El Principio del Fin" joven roasts those piñas in earthen pits before distilling to 48% ABV, keeping the spirit unaged and clear. Expect roasted agave, damp earth, and campfire smoke up front, with peach, citrus, and herbal notes trailing into a long finish. Pour it neat in a copita, slow.
