Yuu Baal is made by a cooperative of small-batch distillers spread across Oaxacan villages—including San Juan del Río, Tlacolula, and Miahuatlán—who still handle every step by hand, from planting the espadín agave to distillation. This Añejo rests a full year in oak barrels, turning a deep gold and picking up notes of dried fruit and lightly smoked wood layered over the agave's earthy core. Pour it neat to catch the barrel character, or stir it into a smoky Oaxacan old fashioned.
