Tepextate agave grows wild for a quarter-century before it's ready to harvest, then gets blended half-and-half with faster-maturing Espadin for this Oaxacan ensamble from Santo Tomas de Arriba. Roasted in earth ovens, crushed by a mule-drawn tahona, fermented in open wood and distilled in copper, it opens floral and honeyed, then turns to sweet baked apple, peppery heat and a whisper of smoke. Joven and unaged at 44% ABV. Sip it neat and let it slowly open.
