Colorado isn't the first place you'd picture a bourbon coming from, but Woody Creek has been distilling in the Roaring Fork Valley since 2012, using 100% Colorado grain — mostly #2 dent corn with elbon rye and malted barley — mashed with Rocky Mountain water. Aged a minimum five years in charred American oak, it pours smooth with vanilla, caramel, and a whisper of spice, finishing on honey and oats. Try it neat or over a single big rock.
