Bottled in stainless steel and born from the highlands of Oaxaca, Whiskey de Maíz 53040 is distilled from four heirloom native corn varieties — yellow, white, red, and blue. It matures roughly three years across second-use American oak, new French oak, and sherry casks, then finishes an extra few months before bottling. Expect roasted corn and honey on the nose, caramel and toasted almond on the palate, and a warm, oak-touched finish. Pour it neat to trace the maize through every stage of the barrel.
