Westland's Garryana series is a genuine oak experiment: Edition 6 ages this Seattle-distilled single malt in a patchwork of casks built from Quercus garryana, a wild oak species native only to the Pacific Northwest, alongside refill Pedro Ximénez sherry butts and a splash of Calvados and grape brandy casks. The result noses of raspberry reduction and dulce de leche, with cedar, cinnamon, and dried apricot on the palate. Pour it neat after dinner to let the native oak's savory spice unfold slowly.

Nose: New leather, brown sugar butter, dried rose, plum.
