Baijiu is China's most-consumed spirit, but this one comes from a pole barn in Wilsonville, Oregon, where a Vietnamese-American family distills a rice-based version instead of the usual sorghum. Family Reserve is their father's personal batch, double distilled, proofed to 106, and rested at least three years — brown rice comes through as nutty, earthy, and full-bodied, with a smoother, more floral edge than their standard bottling. Pour it neat, in small sips, the way the family always has.
