Turin's vermouth tradition runs deep, and Bordiga has been distilling it in the Cuneo foothills since 1888, following the process founder Pietro Bordiga set down as a bartender-turned-herbalist. This 18% ABV white vermouth starts with Piedmont white wine and works in gentian, cardamom, bitter orange peel, elderberry, sage and Madagascar vanilla, each botanical infused separately before a slow 40-50 day rest. The result: pale amber color, vinous spice on the nose, and a Moscato sweetness that fades into gentle bitterness. Serve chilled or in a white Negroni.
