The third release in Suntory's Story of the Distillery series turns its handmade Echizen washi label into a tribute to Hakushu's smallest neighbors: the artwork features the red-flanked bluetail, a forest bird that lives in the woods surrounding the distillery — a nod to the bird conservation work Suntory has carried on at Hakushu for more than 50 years. The whisky is a vatting of smoky Hakushu malt matured in bourbon barrels, bottled at 43% ABV.
It pours classic Hakushu — fresh and forest-clean, with pineapple, vanilla cream, and roasted green tea aromas, a delicate rock-sugar sweetness, and a lightly bitter ember-smoke finish shaped by pure mountain water and the cool climate of the Southern Japanese Alps. An annual, lottery-sold edition in Japan, made for sipping slowly.
