Ocho was tequila's original single-estate project—Carlos Camarena bottles each harvest by the specific highland field it came from, rather than blending fields together. This Extra Añejo rests three years in previously used American whiskey barrels, just enough oak to layer in caramel, dried fruit, and toasted wood without burying the roasted agave underneath. Made the old way: brick ovens, wooden fermentation vats, copper pot stills, agave and water only. Pour it neat in a snifter and let it sit a minute before the first sip.
