This one's a bit of a mystery bottle: Connacht Whiskey Company sourced casks from an undisclosed Irish distillery and decided the whiskey was too good to cut with water. Ten years in ex-bourbon oak brought soda bread, baked pear, and spiced praline forward, with honeyed stone fruit and cinnamon lingering into a warm, sweet-spicy finish. Bottled at full cask strength (115 proof) in a limited run of 5,000 half-bottles. Pour it neat, or add a few drops of water to unlock the vanilla.
