Panama's tropical heat does the heavy lifting here. At the family-run Varela Hermanos distillery, this rum is distilled from molasses grown on Panamanian cane, then rested at least five years in ex-bourbon American white oak. The warm climate speeds up the oak's work, drawing out buttery fudge, praline chocolate, and a curl of overripe banana, all trailed by white-pepper toffee spice. Sip it neat or over a single big cube, and let those dessert notes open up slowly.
Tasting notes
Colour: Amber.
Nose: sweet and spicy, notes of vanilla, caramel, nutmeg.
Taste: Vanilla, caramel, fresh oils, lemon zest, white pepper.
Finish: Long lasting, spicy.
