Meet an Oaxacan mezcal built the old way: hand-picked Espadin agave grown in the Sierra Madre highlands of San Dionisio Ocotepec, cooked underground for four to five days over desert pine and volcanic rock, then crushed by a horse-drawn tahona and fermented spontaneously in wooden vats before a double pass through rotating copper stills. The result, bottled at 46% ABV, is smooth and clear-flavored with a delicate floral lift and a touch of honey. Pour it neat to sip slow, or build it into a smoky agave cocktail.
