Rabbit Hole's Louisville distillers start with a wheated bourbon — 65% corn, 25% wheat, 10% malted barley — aged in toasted, charred American oak, then rest it in Pedro Ximenez sherry casks sourced from a Spanish cooperage. Bottled non-chill filtered at cask strength (102.1 proof) from a blend of no more than fifteen barrels, it opens with custard, walnut and brown sugar, moves into cinnamon, oak and blackcurrant, and finishes long on toffee and toasted pecans.
