Rabbit Hole's Louisville distillers start with a wheated bourbon — 65% corn, 25% wheat, 10% malted barley — aged in toasted, charred American oak, then rest it in Pedro Ximenez sherry casks sourced from a Spanish cooperage. Bottled non-chill filtered at cask strength (102.1 proof) from a blend of no more than fifteen barrels, it opens with custard, walnut and brown sugar, moves into cinnamon, oak and blackcurrant, and finishes long on toffee and toasted pecans. Pour neat after dinner to let the sherry sweetness unfold.
