Arroqueño agaves spend two to three decades in the ground before they're ready — one of the rarest, most patient varietals in Oaxaca. The Producer's version comes from Maestro Juan Pacheco Santos in Ejutla, roasted in an earthen horno, crushed by a bull-drawn tahona, and distilled in a double-plated copper pot still. Expect tropical stone fruit, black pepper, citrus rind, and a smoky, earthy finish. Sip it neat, slow, in a copita — this is a mezcal built for the patient drinker, not the shot glass.
