Normandy's Pays d'Auge has strict rules for calvados, and Domaine Pierre Huet has been following them since 1865 — five generations deep, still heating their copper alembic with wood chips cut from their own orchard. The cider ferments a full year in century-old oak before double distillation, then rests years longer in cask. The result: caramelized apple and a touch of wood on the nose, bright, appley fruit on the palate, and a spicy finish. Pour it after dinner, the way apple brandy was always meant to be enjoyed.
