Pascal Jolivet sources this Sauvignon Blanc from Le Chêne Marchand, a south-facing limestone plot above the village of Bué farmed with vines nearing 40 years old. Grapes are hand-harvested and gently pressed, then fermented in temperature-controlled steel and rested on fine lees for added texture.
