Tepextate is one of the most patient agaves in the world—it can take well over a decade to mature, so bottlings like this are always a bit of a lucky break. Victor Ramos and his son Emanuel, third- and fourth-generation mezcaleros in Oaxaca's Miahuatlán district, roast theirs in an underground oven, crush it with an ox-drawn tahona, and double-distill in copper.
