This Mal Bien bottling comes from maestro Refugio Calzada — known locally as Don Cuco, a longtime leader among his region's mezcaleros and agave farmers around Chilapa de Alvarez. The Papalote (Agave cupreata) here is grown capon: the flower stalk is cut so the plant pours its sugars back into the heart. Bottled at 47.1% ABV. Sip it neat and slow to catch every layer.
