Lambanog is the great secret of the Philippines. A clear spirit made from the nectar of coconut flowers. There are so many homes and shops with bottles of lambanog tucked away on the back shelf and road side shops with locally made bottles. Lambanog hasn’t been gotten the exposure it deserves. We would love to change that by sharing it with as many people as possible.
To say again, it is made from the nectar of the coconut flower. it is not made from the coconut, or coconut water. It is not a coconut flavored drink or novelty liqueur. Papo Js Lambnog is a clear, clean and bright spirit with a hint of sweetness that smooths out the muscularity of a high proof spirit. With every bottle you get to experience the islands from where it came. With a sip Papo Js, you get the brightness of intense sunshine, you get the earth and salt of coral and volcanic soil, you get that salty sugar of the ocean, and you get the weight and thickness of the humidity on the island.
Papo Js is hand crafted in small batches. It is a product unique to the Philippine islands where they developed this style for over five hundreds of years. The trees that provide the nectar require no fertilizers, herbicides, or pesticides. No artificial irrigation is used so fresh water can be better utilized. Nectar is collected from the small farms where we work in tree tops to collect the nectar by hand. The fermentation process is done naturally without added yeasts and distillation is done in a husk fired still.
