Denver's Laws Whiskey House builds this rye around a single grain: 100% heirloom rye, a semi-wild variety grown high in Colorado's San Luis Valley on the Cody family farm. It's aged over three years in new 53-gallon oak barrels, then individual casks are married and bottled at full cask strength, so proof shifts batch to batch. Expect citrus, baking spice, and golden raisin on the nose, with bright mint, fresh grass, and tropical fruit. A splash of water opens it beautifully for slow sipping.
