Bardstown's Barton 1792 Distillery built its high-rye bourbon the traditional way—five to six years in new charred oak—then gave it something extra: a long rest in used oloroso sherry casks. Named for 19th-century distiller Thomas S. Moore, this 98.7-proof pour picks up dark fruit, toasted nuts, and light tobacco from the sherry-soaked wood, finishing on rye spice and lingering oak. Pour it neat after dinner, or alongside aged cheese and dark chocolate.
Tasting notes
An aroma explosion of sweet, rich fruit and toasted nuts, followed by figs, hints of spicy tobacco and subtle cedar. The palate is sweet with a soft, round initial impression followed by a myriad of aged fruits and nuts. The finish is balanced and sweet with notes of spicy oak.
