From Taiwan's Kavalan Distillery in Yilan, at the foot of Snow Mountain, this single malt shows what subtropical aging can do to whisky — Kavalan's warm, humid climate speeds maturation in a mix of refill and first-fill American oak casks. Bottled at 43% ABV, it opens with ripe mango, pineapple, and honeyed florals, moving into a smooth, medium-bodied palate of vanilla, butterscotch, and gentle spice, finishing with soft oak and citrus. Pour it neat to let the tropical fruit shine, or over a single large cube.
