Think Jubilee, like cherries jubilee. We always wanted to do a cherry wood finish even before we opened, and started with our very first batch. This spirit is distilled and aged in the same fashion as our Firehouse whiskey. From there, we dump the barrels and let the spirit soak in flavor from our house toasted cherry wood chunks. The finish gives it the sweet, fruity, aromatic, and slightly tangy cherry notes.
