Hibernia Distillers marries an 18-year single malt with an 8-year single grain, both raised in flame-charred bourbon barrels, then finishes the pair nine months in Spanish Oloroso sherry butts. Bottled at 46% and non-chill-filtered, it leans honeyed and creamy, with caramel, apricot, and warm spice. Pour it neat, add a drop of water, and let it open.
