Hinotori means "Phoenix" in Japanese. It is distilled by the small distillery of the same name "Hinotori" which rises from its ashes after a stop of its production. Founded in 1949, it launches for its 70 years this limited vintage. Made on the island of Honshu, this grain whisky (60% corn, 10% wheat) and malt whisky has been aged in new American white oak barrels for 5 years.
Tasting notes
Nose: Dried apple and pear, almond, vanilla pod, a hint of dry toast.
Palate: Nice biscuits, peach, more vanilla, now with salted caramel helping it along.
Finish: Subtly chocolatey, with gingerbread and oak spiciness.
