Suntory launched Hibiki in 1989 to mark the distillery's 90th anniversary, blending malt and grain whisky from three sources: Yamazaki, Hakushu, and Chita. The Japanese Harmony expression ages in five cask types, including rare mizunara oak, and pours at 43% ABV. Expect rose and lychee on the nose, honeyed sweetness with candied orange peel and white chocolate on the palate, and a soft, lingering finish touched by mizunara spice. Pour neat or over a single large cube to let the layers unfold slowly.
