Crème de Violette faded from bars for much of the 20th century, which is part of why bartenders treasure it today — it's the floral heart of a proper Aviation cocktail. Giffard, a fourth-generation family producer in France's Loire Valley, builds theirs from an infusion of violet flowers and violet-leaf extract, giving a bright violet-garnet pour and soft, genuinely floral notes of violet and rose. Splash a little into sparkling wine for an aperitif, or reach for it whenever a cocktail needs a purple bloom.
