Mortlach's distillery is known for a partial triple-distillation process, and it shows here — vanilla and spice open onto citrus and dried fruit, then caramelized apple, pear and brown sugar, finishing on pie crust and a peppery snap. Pour it neat by the fire, or alongside a spiced fruit dessert.
