J. de Villebois Pouilly-Fumé Silex is a Sauvignon Blanc from the Loire Valley's Pouilly-Fumé appellation, grown on flint-and-clay "silex" soils formed some 60 million years ago along the Loire's right bank. The estate ferments in temperature-controlled stainless steel, then ages the wine eight months on its fine lees with regular stirring to build texture without oak. Expect a lemon-yellow pour with a mineral, flinty nose laced with red currant, mint, and citrus, finishing smoky and mouthwatering. Pour it chilled alongside goat cheese, oysters, or grilled fish.
