Drappier Brut Nature is a zero-dosage Champagne from the Drappier family house, growers in Urville in the Aube since 1808 and now farming organically and biodynamically across eight generations. Made from 100% Pinot Noir with no sulfur added during vinification and no dosage, it rests on the lees roughly two years, drawing texture and a natural roundness purely from ripe fruit. Expect green apple, Williams pear, citrus zest and a mineral edge on a bone-dry finish. Pour it alongside oysters or a simple roast chicken.
