Grappa has a reputation for being fierce and clear, so here's a twist: this one comes from GIA Distillery, an Italian-rooted operation set inside an 1895 train station in Madison, North Carolina. They ferment the whole grape and rest the spirit in French oak, giving it a golden color and a smoothness grappa rarely shows. Expect moscato and lychee notes leading into a cognac-like finish. Named for a founder's wife, it's lovely poured neat after dinner.
