Some agave races to maturity. Tepeztate takes its time, rooting sideways into rocky mountainsides for 25 to 30 years before it's ever harvested. That patience shows here. El Buho's mezcalero roasts the wild marmorata in a stone oven, crushes it under a horse-drawn tahona, ferments with wild yeast in pine vats, then distills three times in copper to coax out its stubbornly low sugars. Expect high smoke, green pepper, slate, and stony minerality. Pour it neat and sip slow.
