Meet Jabali, the agave that makes mezcaleros sweat: it foams like crazy and holds so little sugar that El Buho runs it through four distillations instead of the usual two. Made in Oaxaca by the Jimenez family, this joven roasts in a stone oven, ferments with wild yeast in pine vats, then rests eight months in steel. Expect green grape skin, white pepper, cinnamon and lime, with a chocolatey, tannic finish. Sip it neat and slow.
