DynaBarr Smiling Oak Whiskey comes out of Houston, Texas, where founder Joe Pelati — a former petrochemical scientist — built a hands-on aging method he calls Dynamic Barrel Aging. Instead of years in a rickhouse, the distillate rests over reclaimed oak segments salvaged from spent barrels, exposed to toasting and fresh air to build flavor fast. The result lands with caramel and cinnamon on the nose and palate, finishing smooth. It's built as an easy entry point for whiskey drinkers — pour it neat to taste the oak, or shake it into a whiskey sour.
