Sixth-generation maestro Emilio Vieyra roasts wild-harvested Cupreata agave in an earthen pit, ferments it with native yeasts, and distills it through a hybrid Filipino-style copper-and-wood still before resting it a year in glass. Bottled at 46%, it opens with wet stone and cooked agave, then fresh pineapple and orange peel. Sip it neat, at room temperature, with an orange slice on the side.
