Most mezcal comes from Oaxaca — this one hails from the Michoacan highlands, where sixth-generation mezcalero Emilio Vieyra works maguey Alto (Agave inaequidens), an agave that grows for 8 to 14 years. It's roasted in a conical earthen pit over volcanic stone, fermented with wild yeast, and twice distilled in a Filipino-style still. Expect fresh, herbal, citrus-floral notes with a green, minerally edge and far less smoke than you'd guess. Pour it neat in a small copita and sip slowly.
