Ruinart is the oldest established Champagne house, founded in 1729 and named for a Benedictine monk who watched Parisian aristocrats drink "wine with bubbles" decades before it had a name. Dom Ruinart Blanc de Blancs is 100% Chardonnay from Grand Cru vineyards on the Côte des Blancs, aged for years in the same ancient chalk quarries — 38 meters down and UNESCO-listed — that shape its chalky, citrus-and-white-flower character. Pour it slow and well chilled, alongside oysters or something equally briny.
