Here's a mezcal that puts two agaves on very different timelines in the same glass: fast-growing Espadín picked around seven or eight years, alongside wild Madrecuishe that patiently waits about thirteen. Made in San Baltazar Guelavila, Oaxaca, it's cooked in an underground stone oven, crushed by tahona, naturally fermented, and double-distilled in copper. Expect bright citrus and cocoa on the nose, a velvety body, and a dry cedar finish at 42% ABV. Sip it slow and neat.
